Wild Rice Stuffing Recipe

This delicous wild rice stuffing recipe is one even people who don't like stuffing will love!

Wild Rice and Mushroom Stuffing

Ingredients (Serves 8)

  • 1 cup uncooked wild rice


  • 2 cups water


  • 5 tablespoons butter


  • 1 1/2 cups sliced mushrooms


  • 1 cup onion, finely chopped


  • 1/2 cup celery, thinly sliced


  • 2 cups fresh broccoli, finely chopped


  • 1/2 cup shredded carrot


  • 1/2 cup water


  • 1 large (16 ounce) package herb seasoned stuffing mix


  • 1 (32 ounce) can chicken broth


  • 1/2 cup sliced almonds (1 small package)


  • Directions

    Add wild rice to 2 cups of water, and add a pinch of salt. Bring to a boil and simmer 40 minutes or until the water is absorbed. Check it often because it can go from underdone to burnt within minutes (either way it's ruined). Fluff with fork and let stand 5 minutes.

    Preheat oven to 350 degrees F and lightly grease a baking dish.

    Melt the butter in a large skillet over medium heat. Add mushrooms and onion. Saute until tender. Turn heat to high. Add celery, broccoli, carrot, and water. Cover skillet and boil for 5 minutes until vegetables are slightly tender.

    Stir in cooked rice, stuffing mix, broth, and almonds. Transfer to the prepared baking dish (or use as a wild rice turkey stuffing just before roasting).

    Bake 30 minutes or until golden brown.

    Suggestions

    To speed things up use 4 packets of Uncle Ben's microwave instant wild rice.
