This chicken wild rice salad recipe has a sweet vinaigrette, grapes, and almonds. It is a twist on a wild rice waldorf salad. It is great on crackers or croissants.
Ingredients (Serves 12)
1 cup wild rice
3/4 cup mayonnaise
1 teaspoon white vinegar
1 teaspoon white sugar
2 1/2 cups cooked, chicken
1/4 cup diced green onion
1 cup seedless red grapes
1 package slivered almonds (about 6 oz)
Salt and pepper to taste
Directions
Cook wild rice according to package directions. Remove from heat and set aside to cool.
In a medium bowl combine mayonnaise, vinegar, and sugar to make the sweet vinaigrette. Then stir in the wild rice, chicken, onion, and grapes until evenly coated with dressing. Cover and refrigerate for 1 to 2 hours.
Before serving, sprinkle slivered almonds over the top of the salad.
Substitutions and Additions
Use shredded turkey instead of chicken to turn this heart healthy recipe into a wild rice and turkey salad - a great way to use up leftovers from Thanksgiving.
For added flavor, consider toasting the almonds before adding them to this whole grain salad.
