Wild Rice Salad Recipes


This wild rice salad is great on crackers or croissants.

Ingredients (Serves 12)

  • 1 cup wild rice


  • 3/4 cup mayonnaise


  • 1 teaspoon white vinegar


  • 1 teaspoon white sugar


  • 2 1/2 cups cooked, chicken


  • 1/4 cup diced green onion


  • 1 cup seedless red grapes


  • 1 package slivered almonds (about 6 oz)


  • Salt and pepper to taste

    Directions

    Cook rice according to package directions. Remove from heat and set aside to cool.

    In a medium bowl combine mayonnaise, vinegar, and sugar. Stir in rice, chicken, onion and grapes until evenly coated with dressing. Cover and refrigerate for 1 to 2 hours.

    Before serving, sprinkle slivered almonds over the top of the salad.

    Substitutions and Additions

    This heart healthy recipe can be used with shredded turkey instead of chicken - a great way to use up leftovers from Thanksgiving.

    For added flavor, consider toasting the almonds before adding them to this whole grain salad.
