Wheat Berry SaladThis whole wheat berry salad has been a family favorite for years. A New York deli shared this prized recipe with us and we are pleased to share it with you. Ingredients Directions Add 1 cup of rinsed wheat berries to 3 cups of water. Add salt. Bring to a boil and simmer 45-60 minutes. Fluff with fork and let stand 5 minutes. While cooking wheat berries, saute red onion in 2 tablespoons of oil until the onions are translucent. In a large mixing bowl, combine the cooked wheat, sauted red onion, and remaining ingredients. Mix salad thoroughly. Refrigerate 1 hour. Serve cold and enjoy! |
