Vegetarian Stuffed PeppersMillet RecipesThis is one of our easiest Millet recipes. These vegetarian stuffed peppers are sure to become a dinner favorite! Ingredients (Serves 5)
Directions In a medium saucepan combine millet, water, vegetable bouillon, cumin, chili powder, garlic powder, cayenne, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. When the millet is done, mix in the tomatoes and black beans. Cut off the tops from peppers and remove the seeds and cores. Spoon millet filling into the peppers until filled. Place the peppers into a glass baking dish and cover with plastic wrap. Cook in the microwave for 10 minutes. Turn peppers every 3 minutes to ensure they cook evenly. Substitutions and Additions Substitute your favorite salsa for the tomatoes. Quinoa can be substituted for the millet. | ||
