Easy Vegetarian Stuffed Peppers Recipe

Here is an easy vegetarian stuffed peppers recipe with green bell peppers, millet, tomatoes, and spicy black beans. Baked in the microwave, this recipe makes for a quick and easy vegetarian dinner.

Easy Vegetarian Stuffed Green Bell Peppers

Ingredients (Serves 5)
  • 1 cup millet


  • 4 cups water


  • 4 cubes vegetable bouillon


  • 1/8 teaspoon cumin


  • 1/8 teaspoon chili powder


  • 1/8 teaspoon garlic powder


  • 1/8 teaspoon cayenne


  • 1/8 teaspoon pepper


  • 5 medium green bell peppers


  • 3 medium tomatoes, chopped


  • 1 (15 ounce) can black beans, drained


  • How to Make Stuffed Peppers

    In a medium saucepan combine millet, water, vegetable bouillon, cumin, chili powder, garlic powder, cayenne, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.

    When the millet is done, mix in the tomatoes and black beans.

    Cut off the tops of the green bell peppers and remove the seeds and cores. Spoon millet filling into the green bell peppers until stuffed. Place the bell peppers into a glass baking dish and cover with plastic wrap.

    Cook in the microwave for 10 minutes. Turn stuffed peppers every 3 minutes to ensure they cook evenly.

    Substitutions and Additions

    Substitute your favorite salsa for the tomatoes.

    Quinoa can be substituted for the millet.
