How to Make Stuffed Peppers In a medium saucepan combine millet, water, vegetable bouillon, cumin, chili powder, garlic powder, cayenne, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. When the millet is done, mix in the tomatoes and black beans. Cut off the tops of the green bell peppers and remove the seeds and cores. Spoon millet filling into the green bell peppers until stuffed. Place the bell peppers into a glass baking dish and cover with plastic wrap. Cook in the microwave for 10 minutes. Turn stuffed peppers every 3 minutes to ensure they cook evenly. Substitutions and Additions Substitute your favorite salsa for the tomatoes. Quinoa can be substituted for the millet. | ||
