Vegan Pancake Recipe

Ingredients (Makes 4)
Time: 15 minutes

  • 1 teaspoon vanilla extract


  • 1 1/2 cups water


  • 1 1/2 cups soy milk


  • 2 cups whole wheat flour (see suggestions)


  • 2 tablespoons white sugar


  • 1 tablespoon baking powder


  • 1/4 teaspoon salt


  • 1/4 teaspoon ground cinnamon


  • 1/2 cup chopped walnuts


  • Directions

    In a small bowl, lightly whisk together the vanilla, water, and soy milk.

    In a medium bowl, sift or mix together the flour, sugar, baking powder, salt, and cinnamon. Make a well in the center, and pour in the milk mixture. Stir just until everything is moistened. Fold in the walnuts.

    Heat a lightly oiled large skillet or griddle over medium heat. Pour about 1/4 cup of batter for each vegan pancake. Brown on both sides and serve warm.
