This whole grain Spelt Cake is moist, chocolaty, and delicious.
Ingredients (Serves 10-12)
2 cups applesauce
3/4 cups white sugar
2 teaspoons vanilla extract
1 1/2 cups spelt flour
2/3 cup cocoa powder
4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Directions
Preheat oven to 355 degrees F and lightly grease a cake pan.
In a large bowl, add applesauce, sugar, and vanilla. Mix thoroughly with a spoon.
In a medium bowl, add spelt flour, cocoa powder, baking powder, baking soda, and salt. Mix thoroughly. Slowly add spelt flour mixture to apple
mixture combining gently but thoroughly.
Pour batter into prepared baking pan and bake 45 - 60 minutes. Watch carefully. When it looks firm, insert a long toothpick or
skewer into the center. If it comes out clean the cake is done. Allow to cool 15 minutes before turning out onto a wire rack
to cool completely.
Substitutions and Additions
For a fudge-like cake, add 2/3 cups chopped walnuts and 1 cup semi-sweet chocolate baking chips.
