Cinnamon Raisin Crunchy Granola Recipe
Ingredients (Serves 12)
Time: About 45 Minutes
Preheat oven to 320 degrees F and line a large baking sheet with baking parchment paper or aluminum foil.
In a large bowl, add the oats, sunflower seeds, and chopped almonds. Mix thoroughly then set aside.
In a medium saucepan, stir together the salt, brown sugar, oil, honey, and cinnamon. Bring to a boil over medium heat. Remove from heat and mix in the vanilla. Add sugar mixture to oat mixture and stir to coat.
Spread granola evenly onto a large shallow baking pan. Bake at 320 degrees F for 20 to 25 minutes or until it reaches your desired level of toastiness. Stir occasionally and be careful not to burn it. Sprinkle the shredded coconut over the granola for the last 10 minutes of baking. Remove from oven then stir in the raisins or cranberries. Cool completely then store in an airtight container.
