Best Recipe for Fried Rice with Vegetables
Ingredients (Serves 8)
2 cups white rice, uncooked
4 cups chicken or beef broth (your preference)
2/3 cup frozen chopped carrots
1/2 cup frozen green peas
2 tablespoons vegetable oil
2 garlic cloves, minced
1 green onion, chopped
2 eggs
1/3 bottle oyster sauce (a must, look for it in the Asian aisle of your supermarket)
Soy sauce to taste
Sesame oil to taste
How to Make Vegetable Fried Rice
In a dry medium saucepan, cook the rice (without water) for 5 minutes or until lightly browned. Pour rice into a bowl and set aside.
Using the same saucepan, boil the broth. Stir in the rice. Return to a boil then reduce heat, cover, and simmer 20 minutes or until
the water is absorbed and the rice is tender. Run the rice under cold water to cool it down before frying.
Meanwhile, in a small saucepan, bring some water to a boil and add carrots and peas. Wait a few seconds then drain promptly.
In a wok, add the oil and warm over high heat. Add the garlic, carrots, and peas. Saute about 30 seconds then add the eggs.
Stir quickly to scramble the eggs. Stir in the cooked rice and remaining ingredients (adjusting sauces and oil to taste). Serve warm.
Shrimp Fried Rice Recipe
Ingredients (Serves 4)
2 tablespoons vegetable oil
1 tablespoon sesame oil
5 garlic cloves, minced
2 green chile peppers, diced small
2 cups cooked shrimp
2 eggs, beaten
2 cups basmati rice, cooked and chilled
1 tablespoon white sugar
1 tablespoon oyster sauce (Asian aisle of your supermarket)
1 tablespoon soy sauce
1 green onion, chopped
2 tablespoons chopped fresh basil leaves
5 tablespoons chopped fresh cilantro
How To Make Fried Rice with Shrimp
Before cooking fried rice, prepare all of the ingredients ahead of time because everything cooks quickly in this recipe.
It is important that the rice be cold before frying.
In a large frying pan or wok, warm the oils over medium-high heat. Saute the garlic, chiles, and shrimp until
lightly browned. Make a well in the center of the pan and add the egg to it. Stir quickly to scramble it then mix everything together.
Turn the heat to high. Add the rice, sugar, and sauces. Stir until everything is well coated and the rice is
lightly browned. Stir in the remaining ingredients and cook an additional minute. Serve hot.
