Ingredients (Makes 12 Muffins)
Time: 45 minutes
1 cup Kellog bran flakes cereal with raisins (or any of your other favorite brands)
3/4 cup milk
1 egg
1/4 cup applesauce
1 teaspoon vanilla
1/2 cup all-purpose flour
1/2 cup whole wheat flour (see suggestions)
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup brown sugar (or honey just be sure to reduce the milk to 1/2 cup)
Directions
Preheat oven to 400 degrees F (200 degrees C). Spray muffin pan, including the top, with cooking spray.
In a medium mixing bowl, stir together the raisin bran cereal and milk. Let stand 10 minutes. Whisk in egg, applesauce, and vanilla.
In a separate bowl, add the flours, baking powder, salt, and sugar. Mix throughly. Add dry ingredients to wet ingredients. Mix until everything is moistened. Use as few strokes as possible (lumps are okay). Fill greased muffin tins 2/3 full.
Bake for 30 minutes or until toothpick inserted into the center of a muffin comes out clean.

Mix in dried fruit and nuts.
