Millet Polenta Recipe

This is such a great switch off for your favorite Polenta. It is great along side your meat dishes or or with shrimp mixed in or all by itself.


Take one cup Millet and toast it slightly in a hot pan rubbed with canola oil or spray coating.

Then add 3 cups stock or vegetable broth (or liquid of choice).

Bring to boil then simmer, covered, for 1/2 hour.

Add in 1/2 cup of finely diced mixed peppers & 1/2 cup finely diced red onions.

Simmer 15 more minutes then fold in 1 cup Monterrey jack cheese (or your choice).
