Millet Muffins

Ingredients (Makes 18)

  • 2 1/4 cups whole wheat flour


  • 1/3 cup millet flour
  • To make your own fresh millet flour just add whole millet seeds to a coffee grinder.
  • 1 teaspoon baking powder


  • 1 teaspoon baking soda


  • 1 teaspoon salt


  • 1 cup buttermilk (No Buttermilk? Just add 1 tablespoon of white vinegar or lemon juice to 1 cup milk and let stand 5 minutes.)


  • 1 egg, lightly beaten


  • 1/4 cup applesauce


  • 1/4 cup vegetable oil


  • 1/2 cup honey


  • 1/4 cup walnuts (optional)


  • 1/4 cup craisins (optional)


  • Directions

    Preheat oven to 400 degrees F and lightly grease 16 muffin cups.

    In a large bowl, add the whole wheat and millet flour, baking powder, baking soda, and salt. Mix thoroughly.

    In a separate bowl using an electric mixer set on medium-low speed blend the buttermilk, egg, applesauce, vegetable oil, and honey.

    Slowly stir the wet-mixture into the dry-mixture until everything is just moist. Pour batter into prepared muffin cups.

    Bake 15 minutes or until a toothpick inserted in the center of a millet muffin comes out clean.
