Healthy KAMUT Salad Recipe

This Kamut salad recipe with cranberries and feta cheese is healthy and full of flavor. It is a great side-dish with chicken.

Ingredients (Serves 6)
  • 4 cups water

  • 1 cup KAMUT (quinoa works too)

  • 3 tablespoons pomegranate juice

  • 2 tablespoons honey

  • 4 tablespoons olive oil

  • Salt and Pepper, to taste

  • 1/2 cup cucumber, diced

  • 1 cup dried cranberries (or dried cherries)

  • 1/2 cup feta cheese, crumbled

  • Directions
    Rinse KAMUT.

    Bring water to a boil. Add KAMUT. Bring to a boil, again, then reduce heat and simmer, COVERED, for 35-45 minutes or until water is absorbed.

    While the grain is cooking, combine the pomegranate juice, honey, and olive oil in a small jar with a tight-fitting lid. Add salt and pepper to taste. Shake the jar to emulsify the salad dressing, and set aside.

    Once the KAMUT is cooked combine it with the cucumber, cranberries, and dressing in a mixing bowl. Toss well to combine. Before serving, add the feta cheese to the salad, and toss lightly. Enjoy!
