Homemade Granola Bars Recipe

Ingredients (Serves 18)
Time: Under 20 Minutes

  • 2 1/2 cups crispy rice cereal

  • 2 cups quick-cooking oats

  • 1/2 cup dried cranberries or raisins

  • 2/3 cup packed brown sugar

  • 1/4 teaspoon salt

  • 2/3 cup honey

  • 2/3 cup crunchy peanut butter

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon cinnamon

  • Directions

    Cover a 9x13 inch baking dish with an 18x13 inch piece of aluminum foil or baking parchment paper.

    In a large bowl, add the rice cereal, oats, and cranberries. Mix thoroughly then set aside.

    Into a small saucepan, stir the brown sugar, salt, and honey. Bring to a boil over medium heat. Remove from heat and mix in the peanut butter, vanilla, and cinnamon until smooth. Pour the wet ingredients over the cereal and oat mixture. Mix thoroughly until everything is well coated.

    Place mixture onto the prepared baking dish. Using your hands, fold the excess foil or paper over the granola and press it down to spread it evenly. Refrigerate 1 hour. Cut into granola bars and wrap each bar individually in plastic wrap. Store at room temperature.


    Chopped almonds, pecans, and flaked coconut make for tasty additions to this already delicious granola bar recipe.
