2 cups quick cooking oats
1 cup whole wheat flour
1/4 cup packed brown sugar
3/4 cup dried fruit (e.g. craisins)
1/2 cup wheat germ
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup chopped almonds (or walnuts)
1/2 cup canola oil or coconut oil
1/4 cup applesauce
1/2 cup honey
1 egg
2 teaspoons vanilla extract
1/4 cup ground flaxseed (optional)
Directions
Preheat oven to 320 degrees F (175 degrees C) and line a 9x13 inch baking pan with aluminum foil or parchment paper. Spray with cooking spray.
In a large bowl, stir together oats, flour, brown sugar, dried fruit, wheat germ, salt, cinnamon, and almonds.
In a small bowl, whisk together the oil, applesauce, honey, egg, and vanilla until well blended. Pour into the dry mixture, and mix by hand until everything is well coated. Using your hands, press granola evenly into the prepared baking pan leaving 1 1/2 inch space at the end of the pan. Don't worry about it spreading. It will cook exactly as where it sits.
Bake 20 to 30 minutes in the preheated oven. Do not overcook. The granola bars are done when the edges begin to brown (the center may still appear undone). Sprinkle with ground flaxseed. Cool completely before turning out onto a cutting board to cut into granola bars (a pizza wheel works best for cutting).
