Healthy Blueberry Muffins

Ingredients (Makes 12 Muffins)
Time: Under 40 minutes

  • 1 1/2 cups wheat bran (or oat bran)

  • 1 cup nonfat milk

  • 1 large mashed banana (or 1/2 cup non-fat vanilla yogurt)

  • 1 egg, beaten

  • 1/4 cup honey (or 2/3 cup brown sugar)

  • 1 teaspoon vanilla extract

  • 1 cup whole wheat flour (see substitutes)

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 teaspoons wheat gluten (to ensure fluffiness)

  • 1/2 teaspoon salt

  • 3/4 cup blueberries (raspberries, strawberry rhubarb, grated fruit, peaches, etc.)

  • Directions

    Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. In small mixing bowl, whisk together wheat bran and milk. Let stand for 10 minutes.

    In a large bowl use an electric mixer to combine mashed banana, beaten egg, honey, and vanilla. Beat in wheat bran mixture. In a medium, sift in flour, baking soda, and baking powder. Add salt. Mix thoroughly. Stir dry ingredients into wet ingredients. Mix with as few strokes as possible (lumps are okay). Fold in the blueberries. Fill muffin cups until 2/3 full.

    Bake these healthy blueberry muffins for 18 - 22 minutes, or until the tops spring back when lightly pressed.

    There are many types of whole wheat flours that are sweeter and lighter than traditional whole wheat. For example, hard white wheat flour creates similar results as all white but is much better for you. There are other choices, too, like kamut flour, spelt flour, oat flour, and teff flour.
