Hamburger Rice Vegetable Soup Recipe
Ingredients (Serves 6)
1 pound ground beef
2 (14.5 ounce) cans diced tomatoes with green chilies (recommend Rotel)
2 cups potatoes, cubed
2 carrots, chopped
1 onion, chopped
1 (14.5 ounce) can whole kernel yellow corn, drained
1 (14.5 ounce) can green beans, drained
1 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon sugar
3/4 cup white rice, uncooked (or brown rice)
1/8 teaspoon ground black pepper
6 cups water
Directions
Saute the hamburger in a stockpot or large saucepan, over medium heat, until well browned.
Stir in the remaining ingredients. Mix thoroughly. Bring to a boil then reduce heat, cover, and
simmer for 1 hour. Serve warm.
Skillet Hamburger Casserole Recipe
Ingredients (Serves 4)
1 pound ground beef
3 cups water
1 1/2 teaspoons Cajun seasoning (recommend Old Bay)
2 medium carrots, chopped small
1 celery rib, chopped
1 yellow bell pepper, chopped
1 envelope onion soup mix
2 cups instant rice, uncooked (or brown rice)
Directions
In a large skillet or frying pan, saute hamburger until well browned. Stir in the remaining ingredients except the rice.
Mix thoroughly. Bring to a boil then reduce heat, cover, and simmer for 10 minutes or until the vegetables are tender.
Return to a boil then add the rice. Remove from heat and let stand 5 - 7 minutes or until the rice is cooked. Serve warm.
Hamburger Spanish Rice Recipe
Ingredients (Serves 4)
2 tablespoons vegetable oil
1 pound ground beef
3 garlic cloves, finely chopped
1 jalapeno pepper, finely chopped
1 onion, chopped
1/2 green bell pepper, chopped
1 cup uncooked white rice (or brown rice)
2 cups chicken broth
1 (10 ounce) can diced tomatoes and green chilies
2 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
1 teaspoon salt
Directions
In a large, deep, frying pan or skillet add the oil and warm it over medium heat. Saute the hamburger, garlic, jalapeno pepper,
onion, and bell pepper until the vegetables are tender and the hamburger is well browned. Add the rice and continue to
saute until the rice is browned.
Stir in the remaining ingredients. Bring to a boil then reduce heat, cover, and simmer for 30 minutes or until all the
liquid is absorbed and the rice is tender.
