Ingredients (Makes 18)
Time: About 2 hours
1 cup milk
2 tablespoons white sugar
1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
Pinch (1/8 teaspoon) of flour and sugar
1/4 cup melted shortening
6 cups bread flour (see substitutes)
1 teaspoon salt

Directions
In a small saucepan over medium heat, bring the milk to a temperature of 185 degrees F (just beginning to bubble). Remove from heat. Add the sugar and stir until it is dissolved. Allow to cool until lukewarm.
Meanwhile, proof your yeast. In a small bowl, dissolve the yeast in warm water (100 - 115 degrees F for active dry yeast; 120 - 130 degrees F for instant or rapid rise yeast). Mix in a pinch of flour and sugar. Let stand until frothy, about 10 minutes. If the mixture does not become creamy and frothy then your yeast is bad and you need to start over with new yeast.
In a large bowl, add the milk, yeast mixture, shortening, and 3 cups bread flour. Blend with a whisk or beater until smooth. Mix in salt and remaining flour to make a soft dough (more flour may be required). Knead about 5 minutes. Place in a greased bowl, cover, and let rise 30 minutes.
Punch down and carefully roll out to about 1/2 inch thick (handle the dough as little as possible to ensure nooks and crannies will form). Cut dough into rounds with a biscuit cutter or any other circular object (i.e. drinking glass).
Sprinkle cornmeal onto waxed paper and set the english muffins on it to rise. Sprinkle tops of muffins with cornmeal, too. Cover and let rise at least 30 minutes (the longer the better).
Heat a greased griddle or frying pan over medium heat. Using a spatula, transfer the english muffins to the griddle and cook 8-10 minutes per side, turning frequently to brown evenly. Serve warm or allow to cool and place in plastic bags for storage. These are delicious split, toasted, and topped with butter, honey, cream cheese or jam.
