Edamame Quinoa Salad

I have served this quinoa salad recipe at parties and it has gone over really well. Due to its high protein content it definitely satisfies hunger for a long time.



Prep time: 15 minutes
Cook time: 12 minutes
Cool and chill time: at least 1 hour



Ingredients

2 cups water

1 cup quinoa, rinsed in a fine mesh sieve and drained

3/4 cup Annie's Naturals Asian Sesame Dressing

1/2 cup shelled edamame

1/3 cup sliced green onions

1/3 cup matchstick-size pieces of peeled carrot and cucumber

2 tbsp. pickled ginger or to taste
1/2 cup chopped roasted tamerind flavored almonds


Directions

Bring water to a boil in a medium saucepan
Stir in quinoa.

Reduce heat and simmer, covered, for 12 minutes.

Remove from heat and let stand for 5 minutes
Fluff with a fork and let cool.
Stir dressing into quinoa, then stir in vegetables and ginger.

Cover and chill for at least 1 hour. Sprinkle with almonds just before serving.
Makes 6 servings.
