Sweet Southern Corn Pudding Recipe Plus Easy Corn Bread Pudding

Sweet Southern Corn Pudding Recipe
Ingredients (Serves 8)
4 eggs
1/3 cup butter, melted
1/4 cup white sugar
1/8 teaspoon salt
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
4 tablespoons cornstarch (or 1/2 cup flour)
1 (15.25 ounce) can whole kernel corn
2 (14.75 ounce) cans cream-style corn
Directions
Preheat oven to 400 Degrees F (200 degrees C).
Grease a 2 quart, flat, casserole dish.
In a large bowl, lightly beat eggs. Add melted butter, sugar, salt, and milk. Whisk in vanilla, cinnamon, nutmeg, cornstarch,
corn, and creamed corn until well blended. Pour mixture into prepared casserole dish.
Bake for 1 hour.
Easy Corn Bread Pudding Recipe
Ingredients (Serves 12)
2 eggs
1/2 cup butter, melted
1 cup sour cream (or plain low-fat yogurt)
1/2 cup half and half milk
1 (8.5 ounce) package dry cornbread mix (Jiffy brand recommended)
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can cream style corn
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
In a large bowl, lightly beat eggs. Add melted butter, sour cream and milk and beat with eggs. Whisk in cornbread mix, corn, and creamed corn. Blend well. Pour mixture into prepared casserole dish.
Bake for 45 minutes or until a fork inserted in the center comes out clean.
Substitutions and Additions
Consider sprinkling sugar across the top before baking.
