The Best of Our
Double Chocolate Chip Muffin Recipes

Ingredients (Makes 18 Muffins)
Time: 40 minutes

  • 1 cup all-purpose flour

  • 1 cup whole wheat flour (see suggestions)

  • 3/4 cup unsweetened cocoa powder

  • 1 1/2 cups white sugar

  • 1/2 teaspoon baking soda

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 1/2 cups milk

  • 1 egg

  • 3 tablespoons vegetable oil (applesauce or pumpkin puree)

  • 1 teaspoon vanilla extract

  • 1 cup semisweet mini-chocolate chips

  • 1 cup chopped walnuts (optional)

  • Directions

    Preheat oven to 375 degrees F (175 degrees C). Line or lightly spray muffin tins, including top, with cooking spray.

    In a large bowl, Sift together flours, cocoa, sugar, baking powder, baking soda, and salt.

    In a medium mixing bowl, whisk together milk, egg, oil, and vanilla. Add this egg mixture to the flour mixture. Using as few strokes as possible, mix until everything is moistened (lumps are okay). Fold in chocolate chips and walnuts. Fill muffin cups 3/4 full with chocolate chip muffin batter.

    Bake for 18 - 22 minutes, or until toothpick inserted in center comes out clean.
