Ingredients (Serves 14) Directions for Making Wild Rice Soup In a stockpot, warm oil over medium heat. Saute carrots, celery, mushrooms, onion, and garlic until tender. Stir in the 8 cups of broth, bouillon, parsley, and thyme . Bring to a boil then reduce heat, cover, and simmer 30 minutes. Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour until there are no lumps. Slowly whisk flour mixture into the stockpot. Bring to a boil and stir until thickened (a few minutes). Stir in mushroom soup, wild rice and chicken and heat through. Serve this creamy wild rice soup warm. |
