Creamy Chicken Wild Rice Soup Recipe

This creamy chicken wild rice soup recipe is gourmet fare. It is delicious and hearty. Perfect for cold winter nights.

Ingredients (Serves 14)

  • 2 tablespoons olive oil

  • 1 cup carrots, shredded

  • 1 cup celery, diced small

  • 1/2 pound fresh mushrooms, chopped

  • 1 small onion, chopped

  • 9 cups chicken broth

  • 1 chicken bouillon cube

  • 1 1/2 teaspoons dried parsley flakes

  • 1/4 teaspoon dried thyme

  • 4 tablespoons butter

  • 1/4 cup all-purpose flour

  • 1 (10.75 ounce) can condensed cream of mushroom soup

  • 3 cups wild rice, cooked

  • 3 boneless chicken breasts, cooked and shredded

  • Directions for Making Wild Rice Soup

    In a stockpot, warm oil over medium heat. Saute carrots, celery, mushrooms, onion, and garlic until tender. Stir in the 8 cups of broth, bouillon, parsley, and thyme . Bring to a boil then reduce heat, cover, and simmer 30 minutes.

    Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour until there are no lumps. Slowly whisk flour mixture into the stockpot. Bring to a boil and stir until thickened (a few minutes). Stir in mushroom soup, wild rice and chicken and heat through. Serve this creamy wild rice soup warm.
