Mexican Chicken Tortilla Soup Recipe

Easy Cheesy Mexican Chicken Tortilla Soup Recipe
Ingredients (Serves 8) Time: Less than 1 hour
3 tablespoons olive oil
1 white onion, chopped
3 cloves garlic, chopped
9 cups water or your favorite chicken stock
We recommend Swanson's Chicken Cooking Stock or
Kitchen Basics Natural Chicken Stock.
1 store bought rotisserie chicken, skin removed, deboned and shredded
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 tablespoons dried parsley
1 tablespoon onion powder
5 cubes of your favorite chicken bouillon
1 (16 ounce) jar chunky salsa(your preference of spiciness)
4 (14.5 ounce) cans peeled and diced tomatoes with chiles
1 (15 ounce) bag whole kernel corn, frozen
2 (16 ounce) cans black beans, undrained
Recommended Toppings on the Side
1 (8 ounce) container sour cream or plain, fat-free yogurt
Crushed tortilla chips
Shredded Cheddar or Mexican Cheese
Directions
Heat the oil in a thick-bottomed stockpot over medium heat.
Saute the onion and garlic until the onion is translucent. Add remaining ingredients.
Bring to a boil then reduce heat and simmer at least 30 minutes (the longer the better).
Serve warm with our recommended toppings on the side.
