This is an authentic Chinese chicken fried rice recipe with easy ingredients and healthy substitutes.
Ingredients (Serves 3)
1 tablespoon butter
1 egg, beaten
1 tablespoon sesame oil
1 onion, chopped
2 cups white rice, cooked and chilled (brown rice works too)
2 tablespoons soy sauce
1/3 bottle oyster sauce (a must, look for it in the Asian aisle of your supermarket)
1/2 teaspoon ground black pepper
1 cup chicken, cooked and chopped
How to Make Fried Rice with Chicken
Before cooking, prepare all of the ingredients ahead of time because everything cooks quickly in this recipe.
Also, it is important that the rice be cold before frying. If you just cooked the rice then run it under cold water.
In a large frying pan or wok, warm butter over medium-low heat. Add beaten egg and cook flat for 1 - 2 minutes.
Place cooked egg on a plate and cut into shreds.
In the same frying pan or wok, warm sesame oil over high heat and saute the onion until tender. Add the rice,
sauces, pepper, and chicken. Stir constantly for 5 minutes then stir in the egg and remove from heat. Serve hot.
