Ingredients (Serves 6)
Time: Less than 1 1/2 hours
1 tablespoon olive oil or butter
1/2 bundle of parsley, finely chopped
1/2 white onion, finely chopped
1/2 lb mushrooms, coarsley chopped
8 cups of water
1 1/2 lbs chicken breasts
4 celery stalks, chopped
4 carrots, chopped
3/4 cup white rice
1 bay leaf
1 teaspoon thyme
Bouillon (your favorite brand)
Directions
Heat olive oil or butter in a medium stockpot over medium heat. Add parsley, onion, and mushrooms. Saute until onion is translucent.
Add water, chicken, celery, and carrots. Boil until chicken is cooked. Remove chicken and shred or chop into bite-size pieces. Return chicken to
the pot.
Bring to a boil and add rice, bay leaf, thyme, and bouillon. Cook just until rice is tender (about 30 minutes). Adjust bouillon and
water for desired taste and consistency. Remove bay leaf and serve warm with one of our
whole grain breads.

To add health without compromising flavor, substitute
brown rice for the white rice.
