Creamy Brown Rice Pudding RecipeThis creamy brown rice pudding recipe is a healthier alternative to white rice pudding, yet still just as delicious. Ingredients (Serves 4) Directions In a medium saucepan, cook brown rice according to package directions. In another saucepan, combine 1 1/2 cups cooked brown rice, 1 1/2 cups milk, sugar, salt, nutmeg, and cinnamon. Cook over medium heat until pudding is thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove pudding from heat, and stir in butter and vanilla. Serve warm.
