Mushroom and Brown Rice Pilaf Recipe

Ingredients (Serves 4-6)
2 tablespoons olive oil
1 cup chopped onion
1/4 cup celery, chopped
1 1/2 cups sliced mushrooms
2 cups chicken broth (or 1 14 1/2 oz can of chicken broth)
2 teaspoons garlic salt
2 cups quick cooking brown rice, uncooked
1/2 cup chopped walnuts
2 tablespoons fresh parsley, chopped
Directions
Heat oil in medium saucepan on medium heat. Add onions and celery. Cook 3 minutes or until tender but still crispy. Stir occasionally.
Add mushrooms. Cook 3 minutes or until mushrooms are tender, stirring occasionally. Stir in broth and garlic salt. Bring to boil.
Stir in rice and cover. Reduce heat to medium-low. Simmer 5 minutes. Remove from heat. Let stand 5 minutes. Mix in walnuts and parsley.
Substitutions and Additions
To turn this recipe for brown rice pilaf from a side dish to a main dish, consider adding cooked, shredded chicken.
For added flavor, toast the walnuts.
