Mushroom and Brown Rice Pilaf Recipe



This instant brown rice pilaf recipe is full of flavor. It is a quick healthy side-dish. Perfect for those who love mushrooms and want to incorporate more brown rice into their diets.

Ingredients (Serves 4-6)

  • 2 tablespoons olive oil


  • 1 cup chopped onion


  • 1/4 cup celery, chopped


  • 1 1/2 cups sliced mushrooms


  • 2 cups chicken broth (or 1 14 1/2 oz can of chicken broth)


  • 2 teaspoons garlic salt


  • 2 cups instant brown rice, uncooked


  • 1/2 cup chopped walnuts


  • 2 tablespoons fresh parsley, chopped


  • Directions
    Heat oil in medium saucepan on medium heat. Add onions and celery. Cook 3 minutes or until tender but still crispy. Stir occasionally.

    Add mushrooms. Cook 3 minutes or until mushrooms are tender, stirring occasionally. Stir in broth and garlic salt. Bring to boil.

    Stir in rice and cover. Reduce heat to medium-low. Simmer 5 minutes. Remove from heat. Let stand 5 minutes. Mix in walnuts and parsley.

    Substitutions and Additions

    To turn this recipe for brown rice pilaf from a side dish to a main dish, consider adding cooked, shredded chicken.

    For added flavor, toast the walnuts.
