Breakfast Banana Splits
Millet Recipe

This is sooo tasty and healthy! If you have the below you can whip up a healthy banana split in a flash! You need to prepare 5 things:

1) frozen bananas
Freeze peeled bananas after have ripened and have brown spots. Put in ziplock bag in freezer.

2) cooked millet
1 cup dry to 3 cups water. Rinse in fine sieve. Bring to a boil and decrease heat to min. Cook 45-60 min. Once cooled- take a 1/4 cup ice cream scoop and scoop millet onto cookie sheet. Freeze. Once portions have frozen- put in ziplock bag.

3) Carob sauce
1/4 c carob powder
1/3 c dates (press down and add a few extra)
2/3 c silk milk
1 T coffee substitute
1/2 tsp vanilla
pinch salt
2 T dry malt powder (optional)
1-2 t coconut oil

Bring to a boil and simmer 5 min. Blend until smooth. Store in fridge.

4) Roasted whole almonds
Roast at 250 or 275 degrees for 15 min at a time until roasted. Chop and store in fridge.

5) Low fat whipped cream

To prepare:
Take 1-3 millet cubes as desired and put in a little water in bowl and microwave until hot (could steam instead until hot). Add generous amt of carob sauce on top of hot millet. Cut up frozen banana in slices and place around millet (the frozen banana is the cold part instead of ice cream). Add whipped cream over top and sprinkle with roasted almonds. Enjoy!

I was thinking after I submitted that the whipped cream isn't the best option- but I haven't gotten around yet to figuring out how to whip up coconut cream and freezing it as dollops over top- but one of these days I'll get there.


I freeze almost everything I eat in portions and then I have "take out" of a whole menu of dishes every time I go to the freezer. It's great! And keeps me on track and avoiding more unhealthy places and dishes. I would just as soon come home and eat MY food.


I find this recipe so satisfying and delicious that I have totally lost any desire to go to Dairy Queen ever again.
