Blender Wheat Pancakes

I recently learned this recipe from a friend; and my family (who has traditionally been scared away from whole wheat recipes) cannot get enough!!! They literally beg me to make these tasty pancakes at least a few mornings each week. The amazing thing about this recipe is that it does not call for flour--only wheat berries!

Blender Wheat Pancakes

In blender:

Combine 1 cup wheat berries & 1 cup milk.

Blend about 1 minute or until wheat berries are at least coarsely crushed.


Then add:

1/2+ tsp. salt

2 eggs

2-4 tsp. oil (can add less oil and substitute apple sauce

2 Tbsp. sugar

1 Tbsp. baking powder


Blend again until well mixed (about 1 more minute)

*If mixture is too thick, add more milk to thin it out a bit.

This is your pancake batter!

Heat griddle and cook on medium heat so that the pancakes are cooked completely.
(If you turn the heat up too high, the pancakes will be under-done in the center).

Enjoy with any of your favorite toppings. Bananas and berries are a favorite combo with these pancakes.
