Barley Tea Recipe

Roasted Barley tea is a popular Japanese and Korean drink. Americans sometimes use it as a caffeine-free substitute for coffee


Ingredients (Make 1 Gallon)

  • 1/2 cup whole barley grain, roasted
    (or 3/4 cup milled roasted barley)
    NOTE: If you mill your own grain then set your mill to medium.


  • 1 small hop sock


  • 1 gallon container (e.g. ice tea jar)


  • Directions

    Add barley to hop sock and place in gallon container. Fill container with cold water and refrigerate overnight. (Do not steep grain any longer than one night). Best served fresh and warm in the winter, or cold in the summer. Enjoy!


    Traditional Scottish Barley Pudding Recipe

    Ingredients

  • 1 cup barley grain


  • 4 1/2 cups water


  • 1/3 cup currants (or raisins)


  • 1/3 cup raisins


  • 1/8 teaspoon salt


  • Caster (superfine) sugar (No caster? Just grind-up some regular sugar)


  • Light cream (to taste)


  • Directions

    In a medium, heavy-bottomed, saucepan stir in the barley and water. Slowly bring to a boil then reduce heat and simmer 90 minutes. Stir occasionally. Stir in the currants, raisins, and salt and simmer an additional 15 minutes. Serve warm topped with caster sugar and light cream.
