Ingredients (Makes 12 Muffins)
Time: 35 minutes
3/4 cups all-purpose flour
3/4 cups whole wheat flour(See Suggestions)
3/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
4 ripe bananas, mashed
3/4 cup white sugar
2 egg whites
1 teaspoon vanilla
1/3 cup applesauce (or pumpkin puree)
3/4 cup chopped walnuts
Crumb Topping (optional):
1/3 cup brown sugar
2 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoons softened butter
Directions
Preheat oven to 375 degrees F (190 degrees C). Line or lightly spray muffin cups, including top, with cooking spray.
In a large bowl, sift together flours, cinnamon, nutmeg, baking soda, baking powder, and salt.
In a separate bowl, use an electric mixer to combine bananas, sugar, egg whites, vanilla, and applesauce. Add banana mixture to the flour mixture. Using as few strokes as possible, mix until everything is moistened (lumps are okay).
Fold in walnuts. Spoon banana nut muffins batter into prepared muffin cups, 2/3 full.
For crumb topping (optional): Use a fork to mix together all the ingredients until crumbly. Lightly sprinkle crumb topping onto each muffin.
Bake in preheated oven for 18 to 22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
