Best Banana Chocolate Chip Muffins

Ingredients (Makes 16 Muffins)
Time: 35 minutes

  • 1 cup all-purpose flour

  • 3/4 cup whole wheat flour(See Suggestions)

  • 3/4 cup brown sugar

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 egg

  • 1/2 cup butter (or vegetable oil or applesauce)

  • 1/2 cup sour cream (or milk or vanilla yogurt)

  • 1 teaspoon vanilla extract

  • 2 mashed ripe bananas

  • 1/2 cup chopped walnuts

  • 3/4 cup semisweet mini-chocolate chips

  • Directions

    Preheat oven to 375 degrees F and line or lightly spray muffin tins, including top, with cooking spray.

    In a medium mixing bowl, sift together the flours, sugar, baking powder, baking soda, and salt.

    In a separate bowl, whisk together the egg, butter, sour cream, and vanilla. Add this egg mixture to the flour mixture. Using as few strokes as possible, mix until everything is moistened (lumps are okay). Fold in bananas, walnuts, and chocolate chips. Spoon banana chocolate chip batter into muffin cups, each 2/3 full.

    Bake 18 - 22 minutes or until a toothpick comes out clean. Allow to cool for 5 minutes before removing muffins from pan to wire racks.

    There are many types of whole wheat flours that are sweeter and lighter than traditional whole wheat. For example, hard white wheat flour creates similar results as all white but is much better for you. There are other choices, too, like kamut flour, spelt flour, oat flour, and teff flour.
