Amaranth Cereal

I love Amaranth. This AM I made Amaranth cereal. I cooked 1/2 cup of Amaranth with 1 cup of water. To this I added some Pumpkin Pie Spice, a little Vanilla, a dash of salt, and a pack of granular Stevia. I cooked the Amaranth for approximately 20 minutes, and let it sit for about 5 minutes. I then added rice milk to make the cereal the consistency I wanted.

Amaranth has a lovely texture and a most unusual taste. It's also great for an alternative grain as it is gluten free. There are a lot of ways to cook and use Amaranth and they can be found on line. PMSmith
